Chicken & Jollof Rice

WHAT YOU NEED

  • 1 Chicken Breast

  • 125g Wholegrain Rice

  • 25g Quinoa

  • 1 Can Tinned Tomatoes

  • 1 Red Pepper

  • 1/4 Aubergine Sliced

  • 100g Green Peas

  • 2 Cloves Chopped Garlic


WHAT YOU NEED TO DO

  1. Add rice & quinoa into saucepan with double amount of water and boil over medium/high temperature

  2. Cut Chicken Breast into strips and marinade in olive oil and smoke paprika

  3. Chop red pepper aubergine and garlic into thin slices and put in baking tray along with chicken

  4. Put roasting tray in the oven for 20-25mins on 180

  5. Once rice has boiled, keep on a very low heat, add in the tinned tomatoes and jollof seasoning for a couple of minutes and stir.
